Lemon Drizzle Cake
Lemon Drizzle Cake is a lemon flavoured sponge cake with a crusty top. The ingredients for lemon drizzle cake are as follows.
Ingredients:
All purpose flour: 2 cups (Approximately 200g)
Condensed milk: Half tin
Butter: half cup
Milk: half cup
Baking powder: 1 table spoon
Baking soda: 1 and half teaspoon
Vanilla extract: one teaspoon
Zest of two lemon
Juice of half lemon
For Drizzle: Squeeze two lemons and add it to 4 teasppoon of sugar and mix till sugar mixes.
Firstly take a wide mouth pan and add the condensed milk and butter to it. As soon as the butter melts, add vanilla extract, lemon juice and lemon zest and take the pan out of heat. Now add baking soda and baking powder. The mixture will froth a bit when the soda is added.
Now slowly start adding the flour little by little and mix it using a whisk without forming any lumps. It is a good practice to whisk the mixture in one direction as it makes the batter very airy and results in a very soft cake. If the batter is too stiff, use some milk to soften it up!
Pour the batter in a greased cake tin and bake in a oven preheated at 170 degree centigrade. If you put a knife or skewer into the baked cake and it comes out without any cake piece sticking in it, the cake is fully baked and is ready to come out of oven.
Let the cake cool for 15 to 20 minutes and then sprinkle the lemon and sugar mixture over the cake and allow it to cool in the fridge. When the cake is completely cold, the sugar and lemon juice form a very crisp crust over the top.

You are welcome Shibrundha ji... Actually I don't eat eggs so I bake cakes without eggs and still get a very soft sponge!
