Rasgulla

Rasgulla was one of the sweets I made for Diwali. Not hard to make. I'm sure some of you had tried it sometime. If not, here is a simple recipe. (I had doubled up the following recipe) :) Milk - 1/2 litre Lemon Juice - 2 tbsp (or vinegar) Water - 2 cups Icecubes -a few Sugar - 3/4 cup Cardamom powder- half tsp nuts for garnishing - optional

Ingredients and method

Boil the milk in a saucepan. Simmer it.

Add the lemon juice and stir continuously, until the milk curdles.

Add the ice cubes, and let rest for about 10 minutes.

Drain the whey water out by transfering the milk contents (small chunks of paneer & whey water) onto a cheese cloth or a muslin cloth. Some people use dupattas for this purpose.

Wash the paneer in running cold water to get rid of the lemony smell, and set aside to drain for about half an hour.

Transfer the paneer to a bowl, and knead to a smooth consistency.

Make small balls of the paneer.

Make sugar syrup with two cups of water and sugar, in a pressure cooker.

Add the cardamom powder for flavoring, and let the syrup come to a rolling boil, and add the paneer balls one at a time. Give it a gentle stir, and cook the paneer balls until the cooker lets out a whistle.

Cook on slow heat for about five minutes after the whistle. Some people prefer to cook on slow heat for about twenty minutes in a saucepan with a lid (not in pressure cooker), stirring it every few minutes. Both methods work fine.

The rasgullas should be cooked and almost doubled in size.

Serve it chilled. Garnishing with nuts is optional.

Suguna, I did parcel something, but I guess I should have also added a tin on MTR Rasgollas for you. :bigsmile:
I did it in cooker, with one whistle. I haven't tried on slow-cook method yet, though some friends claim to have done that, with satisfactory results. Thought I should mention it, in case you tried. Smile

Do we need only pressure cooker for this? I mean do we need to put the paneer balls in sugar syrup and cook in pressure cooker for steaming?

Have a doubt about sugar syrup also. Can you explain it more clearly. Does syrup needs to get any sticky kind of texture?

I have mentioned one way to do it, the way I tried, and got good results. Some people follow the slow-cook method where they cook the paneer balls in a closed saucepan, stirring it occasionally. I guess both ways work, but I had cooked mine in a pressure cooker. Let's wait to hear from one or two rasgolla experts. We might even get lucky and hear back from bengali rasgolla experts! Smile

Regarding the syrup, the sugar has to be completely dissolved, and the syrup should be left to boil a bit. There is no one-thread/two-thread consistency to wait for.

Yummy, am done am done latha B-) I haven't used pressure cooker,i cooked on a low flame. Got exactly the shop wala taste.
Wanted to give a surprise to dad with this dish.. YupieeeHave to wait till evening for finishing with my dad. Thanks a looooot...!!

Wow...ammu's fav sweet....have tried it once long back lata...but the balls didn't absorb d sugar syrup well...avlo adam pidichadhunga Blum 3 ....let me try now seeing this method :bigsmile:

Wow, superb, mouth watering Lata! Even i too tried a year back with pressure cooker method and came out well. But i used store bought panner. Thank you very much for the recipe. Step wise recipe is very nice.

I like rasgullas but I have not tried at home. Definitely I will try this. Can this be done from paneer ? If so the procedure becomes much simple. Hey na Lata.
