Recipe for Karanja
Giving below the karanja/karanji preparation :
Ingredients:
maida....half Kg (for making the outer cover )
For fillings:
sugar(Powder) .....half Kg (better to grind the sugr rather than buying the powder)
Rava....half Kg
Dry coconut (copra)....half Kg
kaskas ...100gm
charulli...100gm
til(seasame) .....200gm
yellichi(cardamom) ...15-20
kaju.....50gm
kismiss(dry grapes)...50gm
Badam ...50gm
pista...50gm
Method:
scrape the dry coconut and keep aside now one by one fry all the other ingredients(except cardamom), including the dry nuts without the oil or any other fat for long time preservation .Now mix all the ingredients including dry coconut for fillings .
Prepare the dough of Maida with water and oil and make it very soft .Making the dough properly is very important for the crispy covering .
Now make small small chapatis of maida fill the ingredients around 2 big teaspoonful now apply raw milk in the border for sticking the two surface and now fold it like half moon .Now for the design in the border as shown in the picture u can use the wavy cutter or make a small small fold of the border to give a wavy designed border or even u can use the fork for making the border design as shown in the picture and fry it in the oil of your preference .U can preserve this karanja for almost 25 to 30 days.

sorry badam ,pista and kismis it is 50gm and not mg .and it is optional u can make karanja without adding these dry fruits and nuts also

Maha charoli means Sara Palukulu(in tamil).it is a small redish brown dry fruits

Dr Ji, one more doubt. There is no sugar in your ingredients list. Don't we need any sweetner for this? Is the dry fruits sweet flavour is enough?

OMG Maha what a blunder from my side dear .yes we need to add half kg sugar(powdered )if u powder it in grinder that is better .Maha i don't know how to correct it .Surprising to me how i forgot to mention the main ingredient dear .let me request lata to add sugar in the receipe .

Lata there is one correction i have forgot to type sugar ..half Kg in the filling ingredients. is it possible to correct it .I know i should have seen the preview before uploading .....sorry next time i will be more careful.Do u want me to upload again?

Yes rekha mam....somaasee is a lot similar to this except for d fillings we have to use roasted channa gram(pottukkadalai),sugar, coconut scrapings, elaichi, khus-khus...thats all...roast all of them and powder it and can be used for filling inside d same maida puris and deep fat fry them.Will be making them for diwali..shall share it here.:)
