Sweet paniyarams/Instant Neiyappam
In my childhood my mom used to make appams with lots of effort! Wash the rice, soak them overnight, grind them on the stone grinder. Then mash the jaggery and add to the grinder. Cut the coconut to fine pieces...And finally fry them in Pure Ghee! Phew! I had thought that I wud never be able to do all this.
However there is an easy way of making these appams as I normally do.
One can make neiyappams with rice powder that you get in the market (I prefer the ones sold for making kozhkattai/ modak).
Mix it with water to form a thick batter. Then grate some jaggery (you can use the ratio of 2:1 rice:jaggery)or more if you want it sweeter.
Mash two small bananas, as this will make the appams softer.
Now mix the grated jaggery, mashed bananas and small chips of coconut or grated coconut to the rice batter you have prepared.
Add a bit of elaichi/cardamom powder to this.
Now heat Ghee in the paniyaram vessel and fry some lovely paniyarams.
P.N. Try not to make the batter too watery, the thicker the batter the better the shape of the paniyarams!!!

Thanks for d recipe for appam riya...just wanted to share how i make kuzhi paiyaarams....1 tumbler raw rice (pacharisi)levelled and then heaped up urdh dhal (vellai ulutham paruppu) on d same tumbler(for easy understanding-1 cup talai tattina pacharisi adukku mela gopuramaai kuvitha ulundu)...soak it in water for an hour and grind it in mixie coarsely...then u can add 3/4 cups jaggery, elaichi-2-3 and grind it now smoothly. Then transfer d batter in a separate bowl and now add ghee-fried coconut slices(cubes) and little aappa soda (just a pinch like we use for bajji) and now we can fry then in kuzhi paniyaara chatty using ghee...it tastes good.
