Banana - Walnut muffins

Ingredients: * 1/3 cup melted butter * 3 large mashed bananas * 1 1/2 cups all-purpose sifted flour ( I added 1 cup all purpose flour and ½ cup wheat flour to make it a bit more nutritious) * 1 teaspoon baking powder * 1 teaspoon baking soda * 1/2 teaspoon salt * 3/4 cup granulated sugar * 1 slightly beaten egg * ½ cup chopped walnuts Preheat the oven to 350 degrees F. Prepare your muffin pan with aluminum/paper liners or coat with butter/non-sick spray. In a mixing bowl, add all the dry ingredients such as the pre-sifted flour, salt, baking powder, baking soda and mix them. In another bowl, add the sugar, egg, melted butter and the mashed bananas. You can now transfer the contents from your dry-ingredients bowl into the one which has the mashed bananas. Fold it gently until combined and do not mix it too much. The batter is now ready to be scooped into the muffin pan. Fill up the muffin cups 2/3 full and bake in the oven. I used a mini-muffin pan which takes about 12 to 15 minutes. Large muffins take anywhere from 25 to 30 minutes. We usually like to enjoy a couple of them warm, but save the rest for weekday breakfasts.
